Nachos!

Tasty Tuesday…Low(er) calorie kinda-nachos

Try this lower calorie, higher protein version of cheesy nachos next time you’re craving your favourite Mexican snack.

Serves 2 – 3
Total Calories – 950kcal
Total Protein – 90g
Total Carbs – 93g
Total Fat – 26g

Ingredients
1 x sweet potato
2 x small chicken breasts
Nacho or fajita spice mix
1 x red pepper
1 x green pepper
1 x yellow pepper
Small tin of sweetcorn
Handful of low fat cheese
Low fat tzatziki

Directions:
1) Preheat the oven to 200C
2) Chop the sweet potato into thin slices, place onto a baking tray and drizzle with oil
3) Place in the oven for 35 – 40 minutes
4) Dice the chicken breast and cut the peppers into thin slices
5) Stir fry the chicken, peppers, sweetcorn and spices until cooked
6) When sweet potatoes are cooked, remove from the oven and cover them with the chicken and peppers
7) Sprinkle with low fat cheese and return to the oven for 5 minutes until cheese has melted
8) Remove from oven and serve with low fat tzatziki
